Wolfoods operates summer camp kitchens across the country. We are looking for experienced, motivated, and capable KITCHEN MANAGERS / HEAD CHEFS (Lead Staff). This is a hands‑on, demanding position where all lead staff live on site. Room, board, and travel‑expense assistance are provided.
The position requires flawless execution of the Wolfoods Camp Food Service Program. You must possess in‑depth knowledge of food allergens and be able to create dishes for people with a variety of dietary restrictions, plan recipes, maintain strict sanitation to avoid cross‑contamination, and manage the service and culinary needs of the assigned camp. You must keep surroundings clean and comfortable, meet service timing and quality standards for all meal periods and special requests, and communicate professionally with children, front‑and‑back‑of‑house staff, directors, managers, counselors, and diners.
Duties & Responsibilities- Perform all duties aimed at providing excellent guest service efficiently.
- Develop effective staff schedules and side‑work coordination based on business levels and budget.
- Maintain cleanliness, organization, and uniform standards in the Dining Hall.
- Observe dining hall operations during meal periods and follow up on all areas.
- Work with the chef on duty to uphold high standards of food presentation and sanitation.
- Train and develop all front‑of‑house dining personnel.
- Provide ongoing feedback to all service personnel regarding standards and performance.
- Communicate daily with the Head Chef and Camp Directors concerning all dining hall aspects.
- Interact with diners for general feedback.
- Prepare the dining hall at least 15 minutes before service.
- Implement a checklist system to facilitate the dining hall throughout the day.
- Follow Wolfoods initiatives for environmental practices.
- Know all menus and specifications, and maintain them.
- Ensure compliance with safety and health department sanitation standards.
- Maintain inventory, place orders, and manage par levels.
- Use weights and measures to execute recipes accurately.
- Prepare all menu items and special request events while following standardized recipes.
- Lead in planning, scheduling, directing, and training.
- Estimate production needs, foresee excess utilization, and maintain inventory.
- Maintain kitchen and equipment health standards and enforce safety regulations.
- Act as a Front‑of‑House supervisor when necessary.
- 4+ years of commercial kitchen experience.
- Minimum three professional references with application submission.
- Proficiency in skills relevant to this role.
- Ability to self‑motivate and lead a team while following direction.
- Live on‑site in a rural setting with shared living spaces.
- Work under pressure in extreme temperatures.
- Stand for long periods, lift and carry a minimum of 50 pounds, bend, stretch, and reach for extended periods.
- Possess a Serv Safe Allergens Certification before the start of camp (company sponsored).
- Minimum six‑day, 70‑hour work week.
- Cook from scratch; institutional and batch cooking experience highly desired.
