Ottolenghi Edinburgh marks an exciting new chapter for us, our first restaurant in Scotland. Opening in autumn 2026, this will be a vibrant, busy restaurant with a genuine commitment to fresh, seasonal produce and sustainability at its heart.
What you’ll do- Lead, inspire, and develop a passionate bar team, creating a positive culture built on collaboration, respect, and continuous learning.
- Oversee the day-to-day running of the bar, ensuring consistently high standards of service, presentation, cleanliness, and organisation.
- Manage stock control, ordering, supplier relationships, inventory, and waste to achieve agreed GP and cost targets.
- Collaborate closely with chefs, managers, and front-of-house colleagues to maintain the highest quality of food, service, and atmosphere.
- Take ownership of training and development, supporting individual growth
- Deliver exceptional guest experiences by ensuring warm, knowledgeable, and efficient service at every stage of the guest journey.
- Ensure full compliance with licensing laws, food safety, health and safety, and all company policies and procedures.
- Strong knowledge of cocktails, spirits, wines, beers, and beverage trends, with experience developing seasonal drinks menus.
- Passion for hospitality and creating memorable guest experiences.
- Excellent leadership skills with the ability to motivate, coach, and develop a high-performing team.
- Calm, organised, and confident working in a fast-paced, high-volume environment.
- Previous experience in a similar role within a premium hospitality environment.
- Excellent cocktail knowledge and beverage expertise.
- Strong financial and commercial awareness.
- Exceptional guest service and communication skills.
- Confident decision-making and problem-solving under pressure.
