Role Overview

The Chef de Partie is a key member of the Kitchen team at JA The Bruntsfield, responsible for delivering consistently excellent food quality and supporting the smooth operation of the kitchen.

As the hotel continues its journey of elevating standards and preparing for future refurbishment, this role provides an exciting opportunity for a passionate chef to be part of developing the culinary offering and creating memorable dining experiences for our guests.

Working closely with the Head Chef and Sous Chef, you will take ownership of your section, ensuring food is prepared and delivered to exceptional standards across Neighbourhood restaurant, breakfast service, bar and lounge offerings and hotel events.

This role requires someone who is passionate about food, takes pride in their craft and understands that every dish contributes to the overall guest experience.

Key responsibilities of the Chef de Partie will include:
Culinary Responsibilities

Take ownership of your allocated kitchen section and ensure all dishes are prepared to the highest standard.

Prepare, cook and present food consistently in line with recipes, specifications and presentation standards.

Ensure all food leaving the kitchen reflects the quality expectations of JA The Bruntsfield.

Maintain excellent knowledge of ingredients, preparation methods and cooking techniques.

Support menu development by sharing ideas and feedback with senior chefs.

Assist in the delivery of all culinary offerings including:

  • Neighbourhood restaurant service
  • Breakfast operations
  • Bar and lounge food offering
  • Private dining
  • Events and special occasions

Ensure consistency in flavour, presentation and portion control.

Maintain pride and attention to detail in every element of preparation and service.

Operational Excellence

Work as part of the Kitchen team to ensure smooth and efficient service.

Complete daily preparation requirements to a high standard.

Maintain excellent organisation and cleanliness within your section.

Ensure all mise en place is prepared correctly and service-ready.

Follow kitchen procedures, recipes and standards consistently.

Support effective stock rotation and food storage.

Assist with deliveries, stock checks and waste management.

Maintain full compliance with food safety, HACCP and health and safety requirements.

Support the implementation and maintenance of kitchen SOPs.

Work collaboratively with all members of the Kitchen team during busy service periods.

Teamwork & Communication

Work closely with the Head Chef, Sous Chef and wider Kitchen team.

Communicate effectively during service to ensure smooth operations.

Support junior colleagues and Kitchen Porters when required.

Share knowledge and support a positive learning environment.
