Job introduction
Heritage Portfolio are looking for a talented and enthusiastic Event Production and Service Chef to join the team at our Central Production Kitchen in Leith, Edinburgh. With an emphasis on fresh, sustainable, made from scratch cooking, our culinary teams execute outstanding catering and event services, from private dining, weddings and corporate clients to exceptional in-house café services.
Under guidance of our Executive Chef and culinary development teams, you will prepare and deliver a range of menus, from deli style retail offers to high end fine dining experiences, all with our overarching ethos of quality, seasonality, provenance and flavour at their heart.
Joining our central production kitchen team will give you the unique opportunity to work across all site within the business. Heritage Portfolio currently run some of Edinburgh's premier cultural destinations including Scottish National Portrait Gallery, Gallery of Modern Art, Holyrood Palace, Edinburgh Castle, The Royal Botanic Gardens, Signet Library, Mansfield Traquair and Musselburgh Racecourse. We have also previously run the Royal Garden Party, the Royal Edinburgh Military Tattoo and the Genesis Scottish Open.
Whatyou'll do
As an Event Production & Service chef your main responsibilities will be:
- Prepare, cook and present dishes as designed by our kitchen development team with a focus on sustainability and fresh local produce.
- Complete all preparation required for service.
- Support with event service in multiple different venues as well as our central production kitchen.
- Maintain high standards of food quality, presentation and consistency.
- To be able to work on a variety of different menu styles from sandwiches, cakes & pastry to high end fine dining for both production and service.
- Ensure the section is clean, organised and fully prepared before, during and after service.
- Monitor stock levels and communicate ordering requirements to the Sous Chef or Head Chef.
- Store and label food correctly, following food safety and stock rotation procedures.
- Follow all HACCP, health and safety and food hygiene requirements.
- Work efficiently during busy services while maintaining attention to detail.
- Support and guide Commis Chefs and junior kitchen team members.
- Minimise food waste and use ingredients efficiently.
- Assist with deliveries, stock rotation, cleaning and other kitchen duties as required.
- Work collaboratively with the wider kitchen and front-of-house teams.
- Excellent communication Skills.
- Attention to detail and punctuality.
- Experience in event service and preparation.
- Passion and creativity
Desirable:
- Food Safety Level 2 qualification minimum
- £15+ per hour, depending upon experience.
