Head of Hospitality & Food | Dukes West of Barns, Dunbar

Just outside Dunbar, Dukes West of Barns brings together a fine art gallery and a bistro built around local talent and local producers. Over the years, it has earned a loyal following among locals and visitors to East Lothian’s sunshine coast. We’re now looking for the person to take it into its next chapter.

This is a hands‑on leadership role for someone who loves hospitality in all its detail: baking at the start of the day, leading the team through service, and delivering an evening event for a gallery opening. You might be a chef, a baker or a talented food creative. What matters is that you pair a real feel for food with strong organisational and people skills.

What you’ll be doing
  • Running the day-to-day food and beverage operation at Dukes Bistro
  • Leading and supporting the front- and back-of-house team, including recruitment and training
  • Developing seasonal menus, specials and baked goods that reflect the character of Dukes and make the most of local produce
  • Managing suppliers, stock, cost control and waste
  • Delivering catering for private events, exhibitions, workshops and special occasions
  • Owning food safety and health and safety compliance
  • Acting as the named premises licence holder
Where it could go

The bistro currently opens 10am–4pm, and there’s significant room to grow into evening dining, supper clubs and private hospitality. You’d also work alongside the Sleigh & Co. and House of Sleigh teams on client experiences and bespoke events, and help shape new food, drink and event concepts across the wider business. We’d love someone who is excited both to run what exists and to build what comes next.

What

you’ll bring
  • A Scottish Certificate for Personal Licence Holders (SCPLH)
  • Strong financial acumen, with proven experience in cost control, waste management and profitability
  • Experience leading a team in a busy food environment
  • An entrepreneurial, creative streak and the ambition to make your mark
The details

Full-time, five days over seven, including weekends, evenings and bank holidays.
