Under the supervision of the Farm Manager, the Mobile Processing Unit Coordinator serves as the daily operations coordinator for the KSU Poultry Processing Building and the KSU Mobile Processing Unit at the Harold R. Benson Research and Demonstration Farm. The position is responsible for training producers on proper facility use for processing poultry, fish, rabbits, and other species as needed, maintaining compliance records for USDA, FDA, and Kentucky Health Services, and holding certification in food handling and chemical application.

• Maintain daily operations of the KSU Poultry Processing Building and assist with the Mobile Processing Unit.
• Train producers on the use of the facilities for processing poultry, fish, and rabbits.
• Maintain up‑to‑date records on processing activities for USDA, FDA, and Kentucky Health Services.
• Maintain required certifications in food handling and chemical application.
• Assist with maintenance of facilities and equipment used in the program.
• Respond to Extension stakeholders through emails, phone calls, letters, and occasional site visits.
• Assist with general care and maintenance of poultry at the research farm and support poultry‑related research projects when needed.
• Perform other related duties as assigned.
• Participate in Extension program meetings, trainings, and community engagement as requested.

• Knowledge of food safety and processing regulations.
• Ability to obtain and maintain certification in food handling, processing techniques, and chemical application.
• Basic livestock care procedures.
• Effective oral and written communication skills.
• Ability to lift 50 lbs.
• Experience with animal processing preferred.
• Ability to obtain food manager’s certification.
• Computer literacy.
• Ability to work cooperatively in a team effort.
• Initiative, resourcefulness, punctuality, and ability to work independently.

This position does not have supervisory responsibility but may provide functional guidance to producers, students, or volunteers using the facility.

• Bachelor of Science in Food Science, Animal Sciences, or related field.
• Minimum of 5 years of poultry processing experience may substitute for the education requirement.

Certification in food handling and chemical application required; ability to obtain food manager’s certification within one year.

• Work performed outdoors in varying and sometimes adverse weather conditions.
• Exposure to extreme temperatures, dirt, dust, fumes, smoke, odors, and loud noises.
• Requires strenuous physical activity including heavy lifting, pushing, or pulling of objects over 50 pounds.
• Work environment may involve exposure to hazards or physical risks; adherence to safety precautions is required.
