SummaryThe employee will be responsible for converting hogs to carcasses. The employee will harvest hogs, process and clean carcasses, and transport carcasses to chillers while ensuring that health and safety standards are met.
Education, Licensure and ExperiencePrior harvesting or processing experience in a USDA inspected meat facility preferred.

Essential Duties and Responsibilities- Cut, trim, and clean meat and/or carcasses.
- Use knives and power tools to perform harvesting activities on carcasses.
- Set up, adjust, and operate food processing production equipment/machinery.
- Clean equipment or machinery on production areas.
- Perform specialized harvesting tasks.
- Expected to work hands on at high speeds.
- Follow all company rules for food and employee safety.
- Collect data on all products and analyze the data to ensure products meet all food and safety requirements and customer requirements.
- Make on the spot analysis of sample products, determine if there are blood clots in the meat, review meat for any membranes or foreign objects that would be harmful to consumers.
- Conduct visual checks and adhere to product specification requirements throughout the manufacturing process to maintain the desired product quality results.
- Maintain adequate knowledge of the product and the equipment to ensure safe operating procedures are followed.
- Suggest changes in workflow process and use of equipment to increase efficiencies of the department and/or production, to maintain the lowest level of downtime and product cost possible, with the goal to create and implement new protocols, which can improve efficiencies or eliminate risks that can affect the Food Safety and Quality in our products.
