Executive Sous Chef – Ocean Forest; Exempt

This leader will oversee all aspects of Culinary within Ocean Forest. By working directly with the Executive Chef, this position is responsible for day-to-day operations, menu creation, financial management, and team leadership. You will be responsible for all day-to-day kitchen operations, properly executing as a member of the line staff when needed by working constantly and cohesively in a variety of cooking methods to assure timeliness, efficiency, and product integrity.

You are responsible for managing kitchen expenses to maximize the profitability of culinary operations while delivering the highest quality product to our members. You strive to achieve and surpass financial goals within budget guidelines. You have the ability to follow standardized recipes and coach your team on how to do the same. You ensure proper labeling and dating, as well as holding and rotating techniques for storage.

You have the ability to use sharp knives safely and proficiently. You can operate gas fired and electric ranges, ovens, steam kettles, broilers, tilting pans, deep fryers, slow roasters, grills, grinders and choppers, slicers, scales, mixers, potato peelers, etc. safely and proficiently. You conduct routine safety and sanitation inspections of the operation to maintain Sea Island’s F&B standards while meeting or exceeding local, state, and federal health and safety regulations.

You are responsible for production of consistent quality product and continued innovation of cuisine to reflect industry trends and member's palates.

You are accountable for member satisfaction by ensuring Sea Island’s food standards are met, address member concerns in a timely and efficient manner, and implement/uphold appropriate departmental standards of quality and timing. You learn the names and personally recognize our members. You provide feedback to leaders based on sales and member preferences. You will learn how to consistently uphold and ensure compliance with departmental procedures, including standards for quality, timing, attendance, appearance.

You follow and ensure all Sea Island safety protocols are consistently met. You maintain situational awareness of your surroundings, keeping an eye on all areas for tidiness and any general maintenance issues, ensuring that all are corrected or reported immediately. You enthusiastically maintain your knowledge of Sea Island’s properties, services, and offerings, and share this information with members. You are generous with your support and help resolve any service issues that arise in a timely and positive way, following up as needed.

You are proactive in aiding when needed and are willing to help with other areas or duties as requested. You assist in other departments when necessary or dictated by business levels and attend meetings as required. You will grow relationships with other resort departments to maintain open communication channels to anticipate and exceed any member needs and requests.
