Job Overview

Birch Bakehouse is a Northern European-inspired bakehouse, gourmet pantry, and event space that opened in Old Greenwich in February 2025. We believe in the imperfectly perfect nature of handmade goods, embracing the uniqueness of each creation. We combine premium ingredients, organic and local when possible, with small-batch production to ensure that every item we offer is crafted with quality. We are building our team of thoughtful, passionate, hard‑working over‑achievers, and would love for you to join us as a Pastry Chef.

You will be responsible for preparing and baking a variety of pastries, cakes, tarts and desserts and finishing the products with fresh fruits, berries and flowers. You will also lead the production of our delicious croissants. This is an exciting opportunity to help build a business while working in a fast‑paced and dynamic kitchen environment.

Responsibilities
  • Prepare and bake a wide range of pastries, cakes, tarts and desserts
  • Use your artistic talent to create simple and elegant decorations that match Birch’s aesthetic
  • Laminate and shape a variety of croissants
  • Work with a team to develop new sweet and savory treats, seasonal menus, and catering menus
  • Uphold the highest food safety and sanitation standards in compliance with health regulations
  • Maintain cleanliness and organization of the kitchen workspace, including proper storage of ingredients and equipment
  • Collaborate with other kitchen staff to ensure efficient workflow
  • Contribute to a warm and inclusive environment for our team and customers
Experience
  • 1–5 years experience working with pastries
  • Strong knowledge of pastry techniques, including cake decorating, dough preparation, lamination, and baking methods
  • Excellent organizational skills with attention to detail in food presentation and preparation
  • Strong communication skills and ability to work collaboratively within a team
  • Food Manager’s Certificate is required
  • Experience working in catering or high‑volume production is a plus
  • Culinary training or degree is preferred but not required

Physical Requirements
  • Continuous standing/walking for all tasks
  • Frequent lifting and carrying up to 15 lbs., reaching below shoulder level, bending and turning
  • Occasional lifting and carrying up to 50 lbs., pushing, pulling, crouching, bending and reaching above shoulder level
  • Exposure to FDA approved cleaning chemicals
