The Meat Cutter’s performance and ability to cut for quality and quantity significantly impact the guest’s dining experience. Top-quality meat cutting ensures the restaurant optimizes profit and that guests receive full value in both product and service.

• Cuts meat according to product specifications and time standards.
• Follows the buffet production system to ensure quality and shelf life compliance.
• Rotates cut and boxed meat to maintain freshness.
• Stocks and arranges the Meat Cooler following food safety guidelines.
• Sanitizes all surfaces between chicken and other meats to prevent cross-contamination.
• Recognizes spoiled meat by its appearance and smell.
• Cleans and sanitizes the meat room according to standards.
• Adheres to local health department laws.

• Maintains inventory using administration forms and determines production levels.
• Reports discrepancies in product or equipment to the Manager.
• Completes opening and closing administrative procedures.
• Maintains equipment as per the maintenance manual.
• Performs duty roster tasks.
