- Oversee cooks, short order cooks, prep cooks, and production assigned diet aides.
- Participate in menu planning and revisions.
- Prepare samples of food for presentation and taste testing.
- Prepare meat and fish orders; receive them in the absence of the chef, checking for quality and quantity against purchase orders.
- Determine food requirements using production sheets and patient census or applicable head count; adjust production levels with approval of Chef and/or Executive Chef; and procure or requisition supplies necessary for production.
- Ensure preparation of food within required time frame in accordance with sanitation guidelines.
- Ensure adherence to standardized recipes, including ingredient measurement and mixing.
- Taste all foods prepared to ensure proper flavor, texture, and consistency, and that items meet established quality standards.
- Check food temperatures using thermometer to ensure safe cooking, holding, and serving temperatures.
- Ensure use of proper conveyance to bring food from cooking area to serving area.
- Ensure storage of food is appropriate to maintain safety and sanitation standards; including cover, label, and date.
- Adhere to the standards identified in the Medical Center’s Organizational Competencies.
- 5 years of experience in both fine dining and healthful food preparation.
- Culinary Associate’s Degree must be obtained within 2 years of hire date.
- Possess satisfactory taste and olfactory sensitivity.
- Excellent verbal and written English communication skills.
- Good time management skills; able to multi-task.
- Culinary Associate’s Degree.
- Food Safety and Sanitation Certification or Serv Safe Certification.
Minimum rate of $63,336.00 Annually. The posted rate is a reasonable good faith estimate of the minimum base pay for this role at the time of posting in accordance with the New Jersey Pay Transparency Act and does not reflect the full value of our market-competitive total rewards package.
