Job Summary: The Apprentice Meat Cutter is responsible for learning the trade of a Meat Cutter by productively performing the duties of the job under the guidance of the Meat Manager, Assistant Meat Manager, or a designated Journeyman Meat Cutter. This position involves entering into and completing a 2-year apprenticeship agreement requiring on-the-job experiences and related instruction prior to being considered a qualified skilled tradesperson.
Responsibilities include assisting customers, preparing orders, and maintaining and servicing the meat display cases. The Apprentice Meat Cutter can perform all duties of the Wrapper and Fish Cutter positions and is limited to assisting others as assigned.
Work performance is reviewed by the Assistant Meat Manager and the Meat Manager, and the Apprentice Meat Cutter is evaluated by them and reviewed by the Store Director. The Apprentice receives guidance, direction, and assistance from the Assistant Meat Manager, Meat Manager, or designated Journeyman Meat Cutter. This training position could lead to a Journeyman Meat Cutter Position, with on-the-job training in the proper use of all tools, machines, and equipment in the Apprenticeship Program.
Essential Job Duties:
- Cutting, trimming, wrapping, packing, labeling, and pricing wholesale and retail meats.
- Preparing ground meats, prepared foods, marinated meats, and all variety meats for retail sales.
- Performing all duties in a safe manner and reporting any hazardous or malfunctioning equipment.
- Providing good, courteous, efficient, and quality customer service.
- Working as a team to promote good morale and efficiency.
- Maintaining and servicing the meat display cases and cleaning all prep room equipment and tools daily.
- Cleaning and sanitizing prep rooms, display cases, and storage areas.
- Providing and caring for personal knives and equipment.
- Releasing transfers to other branch stores as authorized.
- Receiving meat-related merchandise as assigned.
- Understanding and abiding by all company policies and procedures.
Other Job Duties:
- Processing fish and fish by-products for retail sale.
- Taking inventory as needed.
- Serving as the sole Meat Cutter on duty on the night shift and ensuring security control.
- Performing any tasks deemed necessary by management.
Physical Requirements:
- Ability to safely lift up to 75 lbs.
- Ability to push and pull at least 1000 lbs.
- Requires standing for long periods (up to 3 hours without a break).
- Frequent bending, stooping, kneeling, and crawling throughout the day.
Mental Requirements:
- Mental concentration and alertness due to the use of knives and equipment.
- Knowledge and expertise in meat operations.
- Accuracy is essential in all job aspects.
- Manual dexterity and eye-hand coordination are required.
- Ability to communicate effectively in English.
- Ability to work in demanding and sometimes stressful conditions.
- Ability to work independently and as a team member.
- Resourcefulness and ability to multi-task.
Work Hours:
- Based on classification in the Employee Handbook.
- May require working overnight, early mornings, evenings, and weekends.
- Willingness to work at any Times Store on the Island.
Working Conditions:
- Cold working conditions in the Meat Department.
- Temperatures in the Meat Room: 45-50°F.
- Walk-in chills: 30-40°F.
- Walk-in freezers: below 0-20°F.
- Warehouse temperatures may exceed 100°F in summer.
