This position plays an important role in the production and finishing of all scratch-made cakes and desserts at Devon Seafood + Steak. The Pastry Cook oversees daily dessert production, ensuring all products are prepared and presented at a high level with consistency, quality, and attention to detail. This individual demonstrates strong skills and knowledge in kitchen production, plated desserts, baked goods, and finishing techniques while executing daily responsibilities with efficiency, accuracy, and pride in their craft.

Job Duties (Duties marked with an asterisk are essential functions of this job):

• Produce dessert and bakery products while following recipes and/or Chef’s directions consistently and efficiently without supervision *
• Monitor the quality of food items needed for daily mise en place, consistently practicing proper rotation (FIFO) and prep levels *
• Work safely with and around equipment with moving parts, knives, hot surfaces, and steam *
• Write prep lists and control prep inventories, outlet requisitions, and par levels. Handle multiple large amounts of prep levels with consistency and without sacrificing food quality *
• Ensure a high standard of food quality and control products by efficiently using ingredients to minimize waste and costs *
• Maintain a clean and sanitary work environment and station on a daily basis *
• Assist other team members as time allows. Demonstrate leadership skills within your work group or station partners
• Perform other duties as assigned

Qualifications

• Must be 18 years of age or older.
• Minimum of 1 year of experience in high product scratch bakery or upscale/casual restaurant environment, or a related industry
• Must obtain Serv Safe Handler Food Safety Certification.

Knowledge, Skills, and Abilities

• Ability to receive, understand, and carry out instructions. Capable of following directions from Chefs and department leaders
• Proficient pastry skills including icing, glazing and piping, torting/building of cakes and frames, individual dessert production and basic and advanced baking techniques
• Demonstrate advanced ability in all food cookery techniques
• Demonstrate ability to lead, direct, and train other employees and externs
• Working knowledge of kitchen equipment, good knife skills, and possess a full tool kit
• Working knowledge of weights and measures, as well as basic math applications
• Professional appearance and demeanor. Maintain standards of good personal hygiene and proper uniform guidelines. Project a positive, self-motivated, and professional attitude at all times
• Strong organization skills with ability to work independently and within a team environment
• Strong interpersonal skills and ability to communicate effectively as a team player with supervisors, employees, and customers
• Ability to handle a fast-paced, at times, extremely stressful environment
