JOB DESCRIPTION:
HEART OF HOUSE LINE COOK
This job requires the Twin Peaks Heart of House Line Cook to prepare best in class food for every Twin Peaks guest. Each HOH team member is defined by extreme standards & discipline that produce 100% Food Quality, Sanitation & Safety.
GENERAL PURPOSE OF THE JOBThe role focuses on preparing high‑quality dishes in a fast‑paced kitchen, maintaining top‑tier food safety and sanitation while supporting the kitchen team.
UNIFORM STANDARDS- Clean TP black hat facing forward at all times. Brim never bent.
- Hair must be kept clean and under the TP hat.
- Clean shaven. Beards & mustaches are allowed with maintenance.
- Fingernails kept trimmed.
- Jewelry not allowed in ears, face, around the neck or wrists.
- Headphones or earbuds not worn.
- Clean non‑faded or wrinkled kitchen shirt tucked in.
- Adhere to uniform standards.
- Follow prep and line build recipes.
- Check quality of ingredients.
- Maintain clean and organized stations and equipment.
- Ensure HOH standards, safety and sanitation requirements are followed at all times.
- Work as a team.
- Train using tablets or computer.
- Perform any other duty or responsibility deemed necessary by management.
Proven experience as a Line Cook.
LANGUAGE SKILLSAbility to communicate in English and understand prep recipes and line build procedures.
REASONING ABILITYApply common sense to carry out simple one or two‑step instructions, dealing with standardized situations with occasional or no variables.
CERTIFICATES, LICENSES, REGISTRATIONSAttend orientation and agree to policies and procedures outlined by Twin Peaks HOH training. Complete HOH training program before working a shift without supervision. Complete any required local and state food or alcohol service certifications.
PHYSICAL DEMANDSStand, walk, use hands and fingers to handle objects, reach with hands and arms, occasionally lift up to 15 pounds. Specific vision abilities include close vision, peripheral vision, depth perception, and ability to focus.
WORK ENVIRONMENTRegular exposure to fumes or airborne particles from the kitchen, wet or humid conditions in dish area or walk‑in cooler, toxic or caustic chemicals when cleaning. Some locations expose cooks to cigarette or cigar smoke.
