Chef de Partie Pastry – Mandarin Oriental Jakarta

About the JobBased in Mandarin Oriental Jakarta, the Chef de Partie reports to the Executive Pastry Chef and assists senior chefs with food preparation and related tasks.
Responsibilities- Daily Operational – Oversee a specific kitchen station, prepare and cook dishes to high standards following recipes and menus, manage station operations including inventory, ordering and maintenance.
- Train and supervise junior staff members (Demi Chef, Commis and Trainees).
- Ensure high‑quality food presentation and consistency in dishes prepared.
- Collaborate with other stations and kitchen staff to ensure smooth service.
- Contribute to menu planning, recipe development and kitchen innovation.
- Productivity – Organise food production cost‑effectively and hygienically, identify opportunities to reduce costs without affecting service or product quality, improve operational efficiency of the workstation.
- Safe and Sound (HACCP) – Ensure that safety, health, and HACCP standards are maintained, monitored regularly to achieve 100 % on the MOHG health and safety audit, and uphold all Safe and Sound codes.
- People – Use the Colleague Handbook to communicate rules & regulations, train and supervise junior staff, develop skills and knowledge in food preparation and presentation.

- High School Diploma or Equivalent.
- Two‑year degree or Apprenticeship.
- Minimum 1 year experience as Chef de Partie Pastry, 2 years as Demi Chef de Partie, and 2 years as Commis de Cuisine preferably within hospitality.
- Thorough knowledge of gastronomy.
- Extensive knowledge of kitchen equipment.
- Working knowledge of computers and basic software.
- Strong attention to detail, ability to handle multiple tasks and patience.
- Good command of English (written & verbal).
- Pleasant and outgoing personality.
- Passionate, creative and excellent hands‑on trainer.
- Basic computer and software skills.
- Stand/Walk 8–12 hours a day.
