We're looking for an experienced Production Manager to lead our bakery manufacturing operations.
Responsibilities Production Operations Management- Manage end-to-end production activities across bakery manufacturing lines including mixing, forming, baking, cooling, slicing, packaging, and dispatch preparation.
- Ensure daily production targets are achieved as per production plans, customer demand, and quality standards.
- Develop and implement production schedules in coordination with Planning, Supply Chain, and Sales teams.
- Monitor production performance, identify bottlenecks, and implement corrective actions to improve output and efficiency.
- Ensure smooth production flow with minimum downtime and maximum equipment utilization.
- Lead continuous improvement initiatives to enhance productivity, capacity, and operational efficiency.
- Prepare manpower and resource plans to meet production requirements.
- Monitor production costs including labor, raw material consumption, energy usage, and operational expenses.
- Drive initiatives to reduce production losses, waste, and rework.
- Monitor key production KPIs such as:
- Production output
- Yield performance
- Waste percentage
- Downtime
- Labor productivity
- Overall Equipment Effectiveness (OEE)
- Ensure strict compliance with food safety standards including HACCP, GMP, ISO 22000, and Saudi Food and Drug Authority (SFDA) requirements.
- Work closely with Quality Assurance teams to maintain product consistency and compliance.
- Ensure adherence to hygiene, sanitation, allergen control, and traceability procedures.
- Support internal and external audits and ensure timely closure of corrective actions.
- Coordinate with Maintenance teams to ensure preventive maintenance schedules are followed.
- Minimize production interruptions through effective troubleshooting and root cause analysis.
- Support installation, commissioning, and optimization of new production equipment.
- Ensure proper handling and operation of bakery machinery.
- Collaborate with:
- Quality Assurance for product standards and food safety
- Maintenance for equipment reliability
- Supply Chain for material availability
- Warehouse for inventory control
- R&D for new product trials and process improvements
- HR for manpower planning and employee development
- Participate in factory improvement projects and operational excellence programs.
- Bachelor’s degree in Food Technology, Bakery Technology, Industrial Engineering, Manufacturing Engineering, or related field.
- Minimum 8–12 years of experience in industrial bakery manufacturing, FMCG, or food production environment.
- Minimum 5 years of experience managing large‑scale bakery production operations.
- Strong experience with high-volume bakery products such as:
- Buns
- Rolls
