* Supervises the day-to-day activities of F&B staff; manages and supervises personnel, including goal setting, training, performance evaluation, and reviews
* Responsible for all F&B hiring, payroll and timekeeping, schedule, budgeting, F&B ordering and monthly inventory
* Work closely with all departments to ensure all details of an event are covered, including, but not limited to: menus, proper staffing, budget, and banquet set-up
* Perform periodic site inspections for potential or upcoming events
* Responsible for directing and training all F&B staff.
* Responsible for achieving set COGs goals for KFT F&B Service, events, and catering with emphasis on utilizing Craftable.
* Advise senior management on matters related to F&B service and any event coordination; make recommendations as needed
* Responsible for a smooth working environment between F&B staff and Boat staff
* Responsible for the implementation, maintenance and training for Serve-Safe (food safety) and TAPs (alcohol management) policies according to Alaska and regional regulations
* Responsible for food quality and customer service
* Participates in menu design and menu pricing
* Ensures the Food & Beverage product served is of consistently high quality and is delivered to the customer in a timely manner
* Maintain quality standards for environment, service and safety according to the guidelines of the Lodge
* Investigate and resolve complaints regarding food quality or service
* Responsible for maintaining reasonable food and beverage costs and reasonable labor costs in food production and with special events, in keeping with the budget and guidelines
* Ensures all Food & Beverage furniture and equipment is properly and safely maintained, in conjunction with the Maintenance Department
* Must possess the ability to know how to upsell and be creative with selling that works with and for the KFT operations
