Assistant General Manager General Purpose Of The Job

This job requires the Assistant General Manager to work directly with the General Manager and all team members to create and maintain a profitable store environment that provides best-in-class service and hospitality to every guest. The role includes managing costs, recruiting efforts, line management, training, and ensuring that proper policies are followed, including employment and incident documentation. The Assistant General Manager must be dependable, self-reliant, and possess strong guest hospitality, coaching, and teaching skills.

Duties And Responsibilities
  • Effectively teach, motivate, coach and discipline staff, the HOH, and Twin Peaks Girls.
  • Proficiently conduct interviews, warnings, counseling, hiring and firing, and document all events correctly in discussion with the General Manager.
  • Enforce cash handling procedures.
  • Assist in management development toward an AGM level.
  • Proactively recruit as needed.
  • Hold kitchen staff accountable to standards, ticket times, safety and sanitation guidelines.
  • Maintain composure under volume and stress.
  • Uphold standards and expectations.
  • Understand and apply effective systems, methods and processes for execution.
  • Handle accusations of discrimination or harassment following policy and contacting the General Manager and VP of Operations immediately.
  • Create an atmosphere free of intimidation, discrimination, harassment and poor performance.
  • Drive sales by working with General Manager, Managers, Twin Peaks Girls and HOH team members.
  • Coach and counsel team members and Assistant Managers, ensuring accountability and standards compliance.
  • Maintain organized and updated training schedules, programs and materials for new employees.
  • Practice sound inventory control.
  • Control PNL/COGs/Bar, Food and Labor costs, with approval from the General Manager.
  • Present professional appearance each day.
  • Maintain HOH and FOH productivity.
  • Enforce safety, sanitary practices, maintenance and regulatory compliance for the kitchen area, achieving a rating of “A” in Eco Sure/Health Department Compliance.
  • Review schedules weekly, manage shift assignments and staffing levels.
  • Maintain audit readiness (Daily/Shift Critical Audits).
  • Process invoices, ensuring asset protection and security measures are in place.
  • Maintain compliance with Peaks Point Training and state food certificates.
  • Provide responsible alcohol service in accordance with law.
  • Apply mathematical skills for PNL, cost controls, etc.
  • Follow uniform standards for FOH/HOH/Management.
  • Ensure restaurant organization and cleanliness.
  • Maintain R&M program.
  • Maintain employee files with proper documentation.
  • Adhere to operational basics and standards with total commitment: line checks, scheduling, security, testing, training, cook times, etc.

This position will report to the General Manager.

Managers and full restaurant staff.

Uniform Standards
  • Twin Peaks logo, non-wrinkled polo (tucked in).
  • Slacks—black, navy, brown, khaki, grey or jeans (stylish, fitted; no stains, tears, holes or frayed seams/cuffs).
  • Socks—appropriate dress socks for slacks or jeans.
  • Shoes—non-slip, closed-toe dress shoes, rubber-soled or suitable work shoes; belt to match.
  • Hats (HOH only)—no ponytails, mullets, or exotic hair colors; no facial piercings.
  • No shirts with brand names or logos (vendor logos, Affliction, Ed Hardy, etc.).
  • No suits or ties, no shorts, no workout pants, leggings.
  • No dresses or skirts, no white socks with dark pants, and no sandals or sneakers.
Qualifications & Skills
  • Substantial leadership experience in high-volume restaurants and/or bars.
  • Ability to apply commonsense to multi-step instructions and manage quickly changing situations.
  • Mathematical aptitude for calculate change, perform checkouts, cash handling and bank deposits.
  • Complete all required training and comply with local and state regulations, such as food and alcohol service certifications.
Language Skills

Ability to effectively communicate in English. Spanish communication skills are extremely helpful.
