R&D Specialist – Fruit Formulations (Bakery, Dairy & Food Service)

Job Summary

We are seeking a highly skilled and innovative R&D Specialist to develop and optimize fruit-based formulations for bakery, dairy, and food service applications. The ideal candidate will have strong expertise in fruit preparations, including fillings, toppings, sauces, and inclusions, with a focus on functionality, stability, and cost efficiency.

Key Responsibilities
  • Develop new fruit-based formulations for:
    • Bakery applications (fillings, glazes, inclusions)
    • Dairy applications (yogurt, ice cream, flavored milk)
    • Shelf‑life stability
    • Texture and viscosity
    • Cost efficiency
  • Work on sugar‑free, low‑sugar, and clean‑label formulations in line with market trends
  • Conduct trials at lab and pilot scale, followed by industrial scale‑up
  • Ensure formulations meet customer requirements and industrial processing conditions
  • Collaborate with:
    • Sales team for customer‑driven developments
    • Production team for scale‑up and process optimization
    • Quality team to ensure compliance with food safety standards
  • Source and evaluate new raw materials (fruit purees, concentrates, stabilizers, pectin, etc.)
  • Maintain documentation for all formulations, trials, and product specifications
  • Stay updated on industry trends, innovations, and competitor products
Qualifications & Experience
  • Bachelor’s or Master’s degree in Food Science, Food Technology, or related field
  • Minimum 3–5 years of experience in fruit preparations or similar industry
  • Strong knowledge of:
    • Pectin systems (HM, LM, amidated)
    • Stabilizers and hydrocolloids
    • Thermal processing and shelf‑life stability
    • Brix, pH, water activity
  • Experience in bakery and dairy applications is highly preferred
  • Strong product development and problem‑solving skills
  • Hands‑on experience with lab and pilot trials
  • Good understanding of industrial food processing
  • Ability to manage multiple projects simultaneously
  • Excellent communication and teamwork skills
