Position: Cook II-SEIU (28 hrs/wk)

Wage Range: $22.64 - $34.29 per hour. Posted wage ranges represent the entire range from minimum to maximum. For jobs with more than one level, the posted range reflects the minimum of the lowest level and the maximum of the highest level. Some positions also offer additional premiums based on shift, certifications, or degrees. Job offers are determined based on a candidate's years of relevant experience, level of education, and internal equity.

Job Summary: Responsible for preparing food products (main entrees, soups, sauces) in a commercial kitchen setting, utilizing advanced cooking techniques, standardized recipes, and plating guidelines. Meets production schedules in accordance with health, safety, and sanitary standards, guidelines, and regulatory requirements. Ensures the quality of food items, proper utilization and storage of food and supplies, and maintains cleanliness and orderliness of equipment, supplies, and workspace.

Primary Duties:

Preparation, cooking, carving, and portioning of meats, entrees, vegetables, starches, soups, and sauces.

Maintaining all hot and cold prepared foods at proper temperatures.

Planning cooking schedules according to menu and department volume needs.

Selecting and displaying recipe cards.

Reviewing production sheets to determine the type and amount of food to be prepared.

Procurement of food items from refrigerator, freezer, or storage areas.

Requisition ing or directing the procurement of supplies as needed.

Labeling, dating, and storing foods according to department standards.

Following safety and sanitation standards set by the department and government.

Operating commercial food service equipment safely and accurately, including knives, slicers, thermometers, measuring utensils, scales, toasters, food warmers, choppers, mixers, blenders, steamers, grills, fryers, steam kettles, broilers, electric ovens, microwaves, convection ovens.

Utilizing and cooking on open flames, gas equipment, broilers, flat tops, combi ovens, woks, wood stone ovens, and electric ranges.

Performing other duties as assigned.

License, Certification, Education, or Experience (REQUIRED):

High School graduate or equivalent.
Valid Washington State “Food and Beverage Workers” Permit.
Serv Safe or Certified Professional Food Manager certification or ability to obtain within 180 days of hire.
Four years of progressively responsible experience in a culinary environment or equivalent education and experience.
Experience preparing starches, vegetables, soups, sauces, gravies, and maintaining cooking equipment.
Ability to understand and apply business math.
Clear communication skills.
Excellent customer service skills.

Desired:

Vocational training in commercial food preparation or equivalent experience.
