Job Summary
:

The role of Research and Development conducts new ingredients and food product research. Develop new sauces, marinades, glazes, batter, and beverages. Improves product quality or cost by modifying formulation of current products. Performs physical and chemical analyses on ingredients and/or food products.

The large volume of products and variety of tests require a very detail-oriented individual who can not only perform the required duties but also document the results in the format mandated by the company. This position reports to the General Manager.

Essential Functions of the Job Primary R&D Duties
  • Initiate R&D innovation which results in the development of new products to support management team to deliver 100% customer satisfaction and achieve company’s business goals.
  • Lead, mentor, and support the R&D team, promoting a culture of innovation, collaboration, and high performance.
  • Oversee the R&D budget.
  • Lead and manage R&D projects from concept to commercialization.
  • Ensure compliance with regulatory requirements and safety standards.
  • Foster a culture of creativity, collaboration, and continuous learning.
  • Maintain R&D and lab equipment.
  • Provide technical expertise for development of new, improvement of existing, or reduction of ingredients in products. Planning, execution, and evaluation of projects while maintaining food safety and regulatory requirements specific to development.
  • Creates premix/sample for testing and product sampling for team.
  • Tracks change and requests until product completion.
  • Generates and communicates necessary blend sheets and product labels.
  • Confirm label directions.
  • Complete accurate food costing of ingredients for the products developed.
  • Understanding basic food science knowledge in ingredient functionality and process technology to develop new or improve existing products.
  • Document all phases of research and development utilizing Teams, Excel Spread Sheets, Vicinity and Safe Foods.
  • Collaborating with the team to discuss product ideas and aspects of product roll-out including marketing, creativity, training, and materials.
  • Nutritional analysis and calculations using nutritional software.
  • Updating Nutritional Labels
  • Updating Product Specifications
  • Changing/Updating Product Labels in Vicinity, Bartender, and Orion.
  • Enter blend information into Vicinity and Safe Food as appropriate.
  • Research and analyze incoming ingredient data.
  • Expediting priority samples and following up on external testing such as Analytical and/or Sensory testing as needed.
  • Maintain and follow FDA labeling requirements and certification.
Secondary R&D Duties
  • Understand and work with Regulatory and Quality Compliance Department regarding compliance of quality system requirements, other regulatory standards and safety, health, and environmental requirements.
  • Reviews and signs off on Product Label.
  • May assist in microbiological testing program including sample collection, tracking and communication with Food Safety Personnel.
  • May assist in customer complaints as directed by retrieving remains of lots in question and comparing with customer samples. May conduct sensory testing when directed.
  • May assist in troubleshooting simple formula problems when products are out of specification such as calculating flavor adjustments or color adjustments.
  • Perform other duties and assignments as directed by management.
  • Complete required documentation and follow the instructions of Food Safety, Security training, Good Manufacturing Practices, and all other Regulatory training programs.
Required Certifications (Can be obtained during training)
  • HACCP – Hazard Analysis Critical Control Point Certification
  • FDA Food Labeling Certification
