SummaryThis position is located in the Food and Beverage Division of the Morale, Welfare and Recreation Department at Naval Air Station Lemoore. The primary purpose of this position is to perform various duties to facilitate food preparation, food service, and maintain cooking and serving equipment and areas in a clean and orderly condition.
Duties- Set up buffet/food lines, steam tables, dining room tables, and side service stands with hot and cold food items including meats, vegetables, salads, desserts, bread, butter and beverages.
- May serve food by placing portions of food on customer's plates. Brew coffee according to the number of servings required. Assemble and toss fresh fruit or green salads in quantity using prepared dressings and portion into standard serving sizes. Portion other food items (e.g., gelatins, juices and desserts) into standard serving sizes using the proper utensils and containers. Makes sandwiches using prepared ingredients.
- Break down and clean assigned area when the meal is finished and return food to the main kitchen.
- Sets up and operates a mechanical dishwasher, including the continuous conveyor belt-feeding dishwasher. Removes inspection doors, strainer pans, screens and spray arms for preventive maintenance and cleaning.
- Scrapes, soaks, scour and scrubs the heavier cooking utensils such as mixing bowls and pots.
- Performs heavy‑duty cleaning tasks in food service areas, such as cleaning ceilings and transoms; exhaust hoods; spaces under and behind kitchen equipment, including moving the equipment; washing floors and walls with powered cleaning equipment; cleaning walk‑in refrigerators and freezers; and sanitizing garbage rooms.
- May unload food from delivery trucks. Move heavy garbage cans when collecting and transferring trash from the work area to the disposal area.
- Assist in taking inventory at required intervals.
- Adhere to all safety and sanitation requirements.
- Performs other related duties.
- Must be 18 years of age or older and have a high school diploma or equivalent.
- Must successfully pass the E-Verify employment verification check. Any discrepancies must be resolved as a condition of employment.
- Must meet federal suitability requirements including successful completion of background investigation.
- Ability to perform tasks involving several procedures.
- Knowledge of food handling techniques and portion control.
- Have ability to perform basic arithmetic.
- Ability to follow verbal and written instructions.
- Must have a working knowledge or ability to learn sanitation standards.
- Working knowledge of procedures to prevent contamination, such as the need to clean equipment previously used for raw food before further use and the need to use a chemical sanitizer or maintain proper water temperature when cleaning dishes.
- Must be able to pass food service screening and training.
Must have a high school diploma or equivalent.
