HOTEL AND RESTAURANT OVERVIEW

We are currently looking for an experienced Chef de Partie to run our Seafood and Cocktail bar located within the vibrant, busy and very popular Mercato Metropolitano Mayfair.

Our bar is easy going and casual but focused on serving top quality small dishes and seafood plates. The food is accompanied by selected variety of wines and beautiful, handcrafted cocktails. From the Chef de Partie we will expect creativity, self discipline and motivation to run the small kitchen and ensure consistency in the food served at all times.

Mercato Metropolitano’s second site, Mercato Mayfair, is a cultural hub and sustainable community market in the regenerated St Mark’s on North Audley Street, North Mayfair.

You can try dishes from around the world at Mercato Mayfair. In keeping with Mercato Metropolitano’s mission, ingredients are fresh, artisanal and sustainably sourced as far as possible. Two levels of food stalls and bars are accompanied by a rooftop terrace, whilst the vaulted crypt basement hosts an authentic wine cellar with fresh cuts and world cheeses, a micro-brewery, events and cookery classes for everybody to gather, learn and share.

Our Chefs de Parte are the core of our operations. Passionate and driven, they are skilfully trained to pass on their knowledge and never lose sight of their ultimate responsibility – to bring the most amazing experience to all of our guests by bringing them best quality food.

Scope of the role, responsibilities and physical requirements

The lifestyle of our Chefs de Partie always demand high levels of energy and positive outlook. They need to show consistency in ever changing environment, they need to be able to overcome challenges in creative and constructive way. They need to be able to work to highest standards under pressure and be consistent in producing the highest quality of food. They are also the ones to first handle and support all the staff.

The key operational duties of our supervisors include:

  • Our Chefs de Partie are responsible for leading the small kitchen and for exceeding guest satisfaction. This will include Supervising and leading a team of Commis Chefs
  • Sampling, smelling and observing food to ensure the top quality and conformance to the recipes and standards
  • Dealing with special requests and guests who would expect the service to go beyond the usual offer.
  • Supervisors will also be expected to resolve any issues that arose during the shift and elevate them to management.
  • Communication is what keeps our departments operating smoothly, our Supervisors must master the skill of effective communication.
  • Our Supervisors need to act as an ambassador of our brand.
Qualifications and Personal Qualities

Our Chefs de Partie are flexible, passionate, eager to learn and driven to provide best service. We also expect them to inject the passion in all employees and being able to create the real team spirit. They need to be able to take ownership and believe in what they do.

  • We expect our Chefs de Partie to have at least 2 years of experience working in service
  • Our Chefs de Partie need to be fluent in English
  • Our Chefs de Partie need to be passionate about food and beverage and being aware of the current trends
