Delivery is a critical growth area for Tortilla, and we are looking for a commercially sharp, operationally strong leader to take it to the next level.

As our Head of Delivery, you will own the strategy, performance and standards of our delivery channel end‑to‑end. From commercial negotiations and joint business planning to operational excellence in our restaurants, you will define how we scale delivery profitably while protecting the guest experience and brand we’re known for.

• Act as Tortilla’s in‑house delivery expert.
• Define and evolve our delivery strategy across the estate.
• Own key relationships with our delivery partners.
• Lead performance reviews and joint planning with delivery partners.
• Build capability and accountability across the business.

• Own end‑to‑end delivery channel performance which includes growth, margin, promotional ROI and contribution by restaurant.
• Lead annual Joint Business Planning with delivery partners.
• Optimise commission structures, media spend and promotional activity.
• Provide clear, data‑driven performance insight to inform commercial decisions.
• Monitor market trends and competitor performance to keep Tortilla ahead.

• Work closely with General Managers and Regional Operations Managers to drive consistent, high‑performing delivery execution.
• Identify and resolve underperformance quickly and effectively.
• Visit sites where needed to diagnose issues and drive improvement.
• Create and embed delivery SOPs across the estate.

• Protect and elevate the Tortilla delivery experience.
• Deliver engaging training that builds capability and confidence.
• Support delivery setup for new openings and delivery‑only kitchens.
• Improve systems, reporting and POS integrations to streamline operations.
• Continuously review guest feedback and implement improvements.

• Proven experience in delivery operations, multi‑site hospitality, or a fast‑paced commercial environment.
• Strong commercial acumen with confidence owning performance.
• Experience working with third‑party delivery aggregators.
• A data‑driven mindset with the ability to be able to turn numbers into action.
• Excellent influencing skills and the ability to gain buy‑in at all levels.
• Comfortable balancing strategy with hands‑on problem‑solving.
• Organised, adaptable and energised by a dynamic environment.
