Oxford Casino Hotel, located in Oxford, Maine, is part of Churchill Downs Incorporated. The casino offers 23 table games, over 900 slot machines, two restaurants (Ox Pub, Oxford Express) and a 107‑room hotel with 6 suites.

The Prep Cook assists in producing and maintaining food items for line cooks or for direct consumption by guests. Responsibilities include properly and safely preparing food items, adhering to set recipes and production levels, and upholding company standards.

• Adheres to all Standard Operating Procedures (SOPs).
• Provides teamwork with all staff.
• Maintains detail orientation ensuring tasks are completed correctly and safely.
• Completes daily assigned tasks safely within a set time frame.
• Reports any poor or inferior quality product to supervisor immediately.
• Handles food in accordance with Serv Safe and Maine Health Code.
• Reports facilities needs or equipment failures promptly.
• Maintains confidentiality and security of relevant information and follows applicable laws.

• Successful interpersonal skills in working with diverse people and authority levels.
• Ability to multi‑task.
• Participates in routine preparation and cooking of food.
• Maintains kitchen and dining area equipment and utensils safely and sanitarily.
• Receives food deliveries, rotates, and stores properly to prevent spoilage.
• Performs other duties of a similar or related level as necessary or assigned.
• Has basic knowledge of kitchen operations and flow including the dishwasher.
• Has practical working knowledge of basic cooking skills, knife skills, and food identification & fabrication skills.

May need to exert up to 50 pounds of force occasionally and/or up to 20 pounds frequently and/or up to 10 pounds constantly. Requires prolonged standing, walking, bending, and reaching. Ability to lift, carry, push, and push items up to 40 pounds.
