Summary Scope and General Purpose of Job
Responsible for the uninterrupted operation, preventive maintenance, troubleshooting, and repair of all commercial kitchen, food and beverage (F&B), and industrial laundry equipment. This role ensures all culinary appliances (ovens, fryers, refrigeration) and heavy-duty laundry machinery (washers, dryers, ironers) operate safely, efficiently, and in strict compliance with hospitality health, safety, and hygiene standards.
OperationalKEY RESPONSIBILITIES
- Maintain and troubleshoot all hot kitchen equipment, including gas/electric combi-ovens, ranges, deep fryers, salamanders, and grills.
- Service and repair commercial laundry systems, including high-capacity washers, gas/steam-heated dryers, flatwork ironers, and folder machines.
- Manage cold-chain and refrigeration units, including walk-in chillers, freezers, under-counter fridges, and ice machines.
- Execute the preventive maintenance (PPM) schedule specifically designed for kitchen and laundry machinery to minimize operational downtime.
- Ensure rapid response to emergency breakdowns during peak service hours in the kitchens or laundry facility.
- Inspect and test utility connections (gas, steam, high-voltage electrical, and water supply lines) feeding the equipment to guarantee safe operations.
- Supervise, guide, and train shift technicians or junior team members assigned to kitchen and laundry work orders.
- Manage spare parts inventory and track the consumption of specialized materials and components needed for repairs.
- Complete detailed shift logs, equipment maintenance history, and PPM job card assignments accurately.
- Leave all work areas, especially food preparation zones and guest laundry interfaces, in an impeccably clean and sanitary condition post-repair.
- Enforce absolute adherence to strict kitchen hygiene, food safety regulations (e.g., HACCP), and general workplace safety procedures.
- Regularly audit gas safety valves, exhaust hoods, fire suppression triggers, and steam pressure release systems.
- Provide a courteous and professional service when interacting with Chefs, Stewards, and Laundry staff.
- Maintain seamless communication and close working relationships with the F&B and Laundry departments.
- Remain adaptable to handle general mechanical, electrical, or emergency engineering tasks if dictated by the operations of the hotel.
