Overview
Head Chef!!! senior member of the kitchen team
Responsibilities- Monitoring and maintaining consistent high food standards and quality across all areas and during all stages of production and supply.
- Ensuring all HACCP is carried out correctly and signed off daily.
- Making sure all dietary requirements are met and all allergen controls are strictly kept to.
- Adhering to quality control measures and hygiene systems are achieved at all times.
- Monitoring the purchasing all food and food related products using nominated suppliers.
- Achieving food budget cost controls, ensuring minimum wastage within the department.
- Actively participating in the ongoing management and development of menus.
- Ensuring accurate stock takes are produced monthly.
- Adhering to procedures relating to stock rotation and use by dates and food is produced so as not to contribute to wastage.
- Making sure all menus are costed accurately.
- Checking that all services i.e., breakfast, morning snack, lunch and tea are to the standards discussed with the General Manager.
- Delivering consistency during service times, ensuring that the food is presented according to agreed specification.
