- Maintaining exceptional food hygiene, allergen management, and health & safety standards at all times
- Working collaboratively with the wider hotel team to deliver outstanding guest experiences across restaurant, bar, room service, and conference & banqueting
- Proven experience as a Sous Chef or strong Junior Sous within a quality hotel or high-volume restaurant environment
- Confident leader who can motivate a team and take full control of the kitchen in the Head Chef’s absence
- Strong organisational and time management skills, with the ability to remain calm under pressure
- Commercial awareness with an understanding of cost control, margins, and labour management
- Creative flair with a passion for modern, guest-focused food
- A hands-on approach and a “lead by example” mentality
- Self-motivated, adaptable, and committed to delivering brand standards
