Operations Management
Pop Up Bagels isn't just a bagel company. It's a cultural movement. Our shops are small, our vibes are loud, and our fans line up around the block to Grip, Rip and Dip. Neon signs, bullhorns, the "Not Famous but Known" mirror, collabs with brands you actually care about. We keep things simple, and we do them really, really well.
Now we're scaling nationally, and we need someone to help take the Pop Up experience to new cities, one shop at a time.
This is not a desk jobAs our Franchise Performance Manager, you're the person franchisees call first. You'll fly into a new market and help turn an empty storefront into a shop with a line out the door. You'll be on the floor training crews how to bake and serve the Pop Up way, then back on a plane to check in on a shop that opened last quarter.
Expect to be travelling between 75-90% of the time, by plane and by car, across your dedicated regions. If airports feel like a second home and you like waking up in a new city, you'll love it here. If you'd rather stay put, this probably isn't your role.
What you'll do- Launch new shops. You'll working with teams to manage shop openings from pre-opening planning through soft launch to grand opening day, including the training that gets a new team ready.
- Train and coach. You’ll teach franchisees and their crews our standards, recipes, and guest experience in person, then keep coaching through visits, webinars, and one-on-ones.
- Keep the bar high. You'll run operational reviews covering food safety, brand standards, and guest experience, and work with owners on plans to grow their numbers.
- Solve whatever comes up. A delivery didn’t show, a new menu item is rolling out, a guest issue needs escalation: you'll handle it. Some weeks you’ll be advising on P&L and local marketing, and other weeks you’ll be unloading boxes. Both are part of the job.
- Connect the dots. You'll work with Marketing, Training, Supply Chain, and Ops so franchisees always have what they need.
- Travel requirements: This is an on-the-ground, in-shop role to assist franchisee shops. This role requires frequent air and car travel. There will be long (and rewarding) days on your feet during visits and openings. Occasionally lifting up to 25 lbs.
- 2 to 5 years in franchise ops, restaurants, retail, or hospitality management, with multi-unit or franchisee support a big plus
- Experience opening stores and training teams from scratch
- Enough business experience to talk P&L with an owner and enough hands-on experience to jump behind the counter during a rush
- The ability to earn trust from people ranging from founders to frontline crew
- Comfort juggling several openings and priorities without dropping any
- A preference for figuring things out yourself over waiting for a playbook
- Working knowledge of Excel, PowerPoint, and field reporting tools
- You’ll help build one of the fastest-growing, most talked-about food brands in the country.
- The brand is closer to a lifestyle label than to typical fast food.
- You’ll work alongside passionate leadership teams, franchisees, and culture-defining partners.
- You’ll get in early and help shape this role and team as we grow.
- Benefits: this is a benefits-eligible and 401k-eligible role.
