Western Smokehouse Partners is seeking a full‑time processing technician room lead for the 2nd shift. The role focuses on producing raw products by receiving, weighing, grinding, mixing, stuffing, linking, cooking, etc., that meet all customer, Quality Assurance (QA) and USDA specifications to ensure customer satisfaction.
Essential Functions- Conduct thorough pre‑op inspections of machines, room, and other equipment used in the production process.
- Receive incoming shipments and document product checks in the proper manner on paperwork.
- Maintain accurate inventory.
- Rotate spice, meat and other product racks to guarantee first‑in, first‑out (FIFO) inventory system.
- Scan raw ingredients into Vista Trac to maintain accurate inventory records and safeguard against input shortages.
- Scan correct raw materials into batches to guarantee traceability in the event of a product recall.
- Store meat in the appropriate cooler/freezer in order to freeze or thaw for upcoming production.
- Clean smokehouses before use each morning.
- Weigh the correct amount of raw materials for each batch.
- Grind raw materials to the precise specifications to maintain quality.
- Change out and set up machines to the correct specifications for each customer.
- Will lift objects that are 60+ lbs. on a daily basis.
- Verify correct v‑mags and load them into the stuffer for accurate casings.
- Hang sticks onto the linking line and inspect to ensure quality.
- Load smokehouses with raw racks and start the program to match batch details.
- Thoroughly clean and sanitize equipment and room.
- Keep floor clean of debris and dispose of contaminated product properly.
- Rope racks with accurate tags for flavor and color to match product.
- Verify label information to ensure product naming and quality accuracy.
- Follow SOPs, GMPs, and all FDA regulations.
- Wear PPE as necessary.
- Unload trailers, verify BOL/packing slips, complete documents, and scan products into Vista Trac.
- Stock ingredients on racks.
- Report any food safety, food defense, or equipment failure to supervisors.
- Assume responsibilities of other Process Technicians and Receiving Manager in their absence.
- Must be able to stand for 8 hours.
- Must lift 50+ lbs. repeatedly.
