Bread Baker, South Miami, FL

Madruga Bakery , a James Beard nominated artisan bakery and cafe located in South Miami, is seeking an experienced bread baker to lead our bread team.

We are a family run, neighborhood bakery, focusing on producing the highest quality products and giving great customer service. Bread baking is the foundation of the bakery, with a focus on whole grain, naturally leavened breads produced from flour milled on our in-house stone mill. The bread team mixes, hand shapes, and bakes a variety of breads including sourdough county loaves, baguettes, ciabatta, and rolls.

We are seeking a passionate baker who has the knowledge and experience to judge proper fermentation, mixing, dough handling, and baking, and the ability to teach and lead others in this craft. We are retail only bakery, making bread in relatively small batches, with an utmost focus on quality. This small environment allows for constant testing and perfecting, as well as the opportunity to develop new breads and experiment with ideas.

Expectations include:

• Experience making naturally leavened bread start to finish (levain maintenance, mixing, shaping, and baking) in a commercial setting
• An enjoyment of learning a natural process
• The ability to manage a bread production and troubleshoot as needed
• The ability to lead others on a team
• The ability to maintain a clean work space and environment
• Strong punctuality and time management skills
• A great attitude and ability to work with others

This is a salaried position, with pay dependent on experience. Expectation of around 45 hours per week, with a 5 day work week. Weekends and holidays are a must, with shifts starting as early as 4am. Relocation assistance available for the right candidate.
