About Honey Veil is a family‑run matcha caf and bakery based in Miami, known for long lines, thoughtful drinks, and baked goods made with a lot of love and a little bit of obsession. Our flagship store at 5748 Sunset Drive will be the home base for our bakery program and future pop‑up locations across the city.
We're hiring a Head Baker / Pastry Chef to own our bread and pastry program from top to bottom, ensuring standards, systems, team, and key prep that our drink program depends on.
Role SummaryThe Head Baker / Pastry Chef leads all bakery production at the Honey Veil Sunset Drive store. This role is responsible for doughs, breads, pastries, and signature baked items; for maintaining strict quality and consistency; and for training and guiding the baking team. They also oversee core prep for the bakery + beverage program (such as house syrups and toppings like Honey Whip) that must be ready for service.
This is a hands‑on role for someone who is comfortable with overnight and very‑early‑morning baker schedules, high standards, and building a strong bakery culture.
- Lead daily production of breads, pastries, doughs, and signature baked goods for the 5748 Sunset Drive store (and over time, for other Honey Veil units).
- Own all bread / pastry standards: mixing, proofing, baking, finishing, and presentation.
- Maintain consistency in taste, texture, and appearance across all products and batches.
- Set and manage par levels to meet demand while minimizing waste.
- Coordinate production so that all required items are ready by store opening (and for trailer / pop‑up needs).
- Oversee and, when needed, directly prepare house beverage syrups (for matcha, coffee, and seasonal drinks).
- Oversee / prep key toppings like Honey Whip and other bakery / drink components that must be ready before service.
- Ensure all prep is labeled, dated, rotated (FIFO), and stored properly so FOH and bar teams can access it quickly.
- Build simple, repeatable systems so overnight / early‑morning prep flows smoothly for both baked goods and beverage prep.
- Train, coach, and supervise bakers and prep staff on technique, speed, organization, and standards.
- Build and maintain written SOPs for all baking and prep tasks (production, syrups, Honey Whip, storage, cleaning, opening / closing).
- Support a positive, accountable kitchen culture aligned with Honey Veil values.
- Work closely with store and FOH leadership to coordinate production and prep with service needs.
- Own all store‑level bakery and related prep inventory (ingredients, dry goods, smallwares related to baking and beverage prep).
- Place and track orders with approved vendors; monitor usage and costs to keep COGS on target.
- Keep the kitchen organized, labeled, and fully compliant with food safety and health regulations.
- Monitor and care for baking equipment; report and track maintenance needs.
- Enforce proper labeling, dating, rotation (FIFO), and storage of all products (baked goods, syrups, toppings, prep).
- Ensure allergen awareness and proper handling procedures at all times.
- Model safe, clean, and efficient work habits for the entire BOH team.
- 3+ years of professional baking / pastry experience in a high‑volume bakery, caf, or restaurant.
- Prior lead, sous, or head baker / pastry chef experience strongly preferred.
- Strong technical skills with doughs, breads, laminated doughs, and production baking.
- Comfortable overseeing batch prep of syrups, creams, and other beverage / bakery components.
- Proven ability to train and organize a small team.
- Excellent organization, time management, and attention to detail.
- Ability to lift up to 50 lbs and stand for extended periods.
- Reliable, punctual, and excited to grow with a fast‑moving brand.
- Bilingual Spanish / English is a plus, not required.
- Schedule:
Full‑time, on‑site role; overnight and very‑early‑morning baking schedules are part of this role, along with some weekends and holidays based on production needs. - Compensation: $48,000 – $56,000 annual salary (approx. $23 – $27 / hr equivalent, depending on experience and skills).
