FRSH by Aroma
360 is seeking a skilled, reliable Sushi Cook to prepare our signature poke bowls, hand rolls, and fresh spring rolls. We’re looking for someone with strong knife skills, experience handling raw seafood, and a commitment to consistent quality, cleanliness, and presentation.

• Prepare salmon, ahi tuna, spicy tuna, shrimp, tofu, and vegetables according to standardized recipes.
• Assemble signature poke bowls.
• Prepare Salmon Truffle, Spicy Tuna, and Veggie hand rolls with consistent portions and presentation.
• Make Salmon Avocado, Spicy Tuna, Shrimp, and Garden Veggie spring rolls.
• Prepare sushi rice, coconut jasmine rice, and brown rice to recipe standards.
• Prepare sauces, dressings, garnishes, and toppings, including truffle ponzu, spicy mayo, yuzu‑soy, and miso‑ginger dressing.
• Set up and stock the station before service and complete daily preparation lists.
• Follow proper seafood handling, temperature control, labeling, storage, and sanitation procedures.
• Follow allergy protocols and prevent cross‑contact and cross‑contamination.
• Maintain portion control, minimize waste, rotate inventory, and report shortages or quality concerns.
• Coordinate with the service team to deliver accurate orders promptly.
• Complete opening, closing, and kitchen cleaning duties.

• Previous experience as a sushi cook or in a poke or Japanese restaurant required.
• Experience safely handling, cutting, and portioning raw fish.
• Strong knife skills and knowledge of sushi rice preparation.
• Ability to prepare hand rolls and assemble bowls neatly and efficiently.
• Attention to detail and ability to follow recipes and portion standards.
• Ability to stay organized during busy service.
• Reliable, punctual, and a strong team player.
• Availability for flexible shifts, including weekends and holidays.
• Food handler training or certification preferred.
