Vista Springs Trillium Grand Estate is seeking a creative, passionate, and dedicated Pastry Chef to join our culinary team. In this role, you will be responsible for designing and producing daily desserts, artisan breads, and special event pastries that bring joy to our community members. The ideal candidate will blend high-quality culinary artistry with the ability to modify recipes for dietary restrictions (low-sugar, gluten-free, texture-modified).
Your goal is to enhance the dining experience and quality of life for our community members through delicious, nutritious, and visually appealing baked goods.
- Baking & Production:
Prepare fresh, high-quality breads, rolls, muffins, cakes, cookies, pies, and pastries from scratch daily. - Menu Development:
Collaborate with the Culinary Services Director to develop seasonal dessert menus that cater to community member preferences. - Dietary Accommodation:
Modify recipes to accommodate specific dietary needs such as diabetic-friendly, low-sodium, low-fat, gluten-free, and texture-modified (pureed) diets without sacrificing flavor. - Presentation:
Decorate and plate pastries with care to create a warm, "comforting" dining experience. - Inventory:
Monitor baking ingredient inventory. - Safety & Sanitation:
Maintain an immaculately clean, organized, and safe workstation in compliance with all local health department codes, Serv Safe standards, and infection control policies. - Community Member Engagement:
Occasionally interact with community members to receive feedback and tailor offerings to their preferences.
- Experience:
Minimum 1-3 years of professional baking/pastry experience, preferably in a hotel, restaurant, or senior living/healthcare environment. - Education:
Pastry arts diploma or culinary degree is required. - Technical
Skills:
Strong understanding of baking, pastry preparation, and ingredient interactions. - Certifications:
Valid Food Handlers card, with Serv Safe Manager certification preferred. - Empathy & Patience:
Ability to work with elderly residents, understanding their needs with compassion and respect. - Communication:
Proficiency in speaking, reading, and writing English to follow instructions and communicate with staff.

Physical Requirements
- Ability to withstand sudden temperature changes from the heat of the kitchen to the cold of the freezers.
- Ability to safely transport hot pans and other hot food dishes from range or ovens to the steam table or other areas
- Ability to maneuver through the kitchen and walk-in-freezer(s) and cooler(s)
- Ability to identify chemicals and properly use and dilute them
- Ability to see dirt, dust and areas to clean
- Ability to hear and speak clearly so as to understand instructions and communicate.
