JOB TITLE: Cook Level II

DEPARTMENT: Culinary/Food and Beverage

SUPERVISOR: Executive Chef and Sous Chefs

POSITION

PURPOSE:

Responsible for maintaining, setting up, food production, and quality control of all meat, fish, fowl, sauces, stocks, seasonings, and other food items prepared at a specific station.

ESSENTIAL FUNCTIONS
  • Prepare all station-specific food items according to standard recipes and/or guest check specifications to ensure product consistency. Visually inspect, select, and use only suitable food items for menu preparation.
  • Check and control proper storage of products, especially stocks and sauces, and manage portion control.
  • Maintain cleanliness of refrigeration, storage, and working areas to comply with Health Department regulations.
  • Ensure all equipment is clean, sanitized, and in proper working condition.
  • Prepare requisitions for supplies and food items; read and employ math skills to prepare items according to recipes.
  • Maintain high quality in food production and presentation.
  • Ensure cleanliness, sanitation, and personal hygiene.
  • Set up stations, breakdown, and perform all necessary prep work.
  • Store requisitioned food items properly.
  • Prepare all food items according to recipe specifications.
  • Keep coolers cleaned, organized, and locked after use if finished.
  • Perform other duties as assigned by the Executive or Sous Chefs.
  • POSITION REQUIREMENTS
    • Sufficient manual dexterity to handle kitchen equipment such as knives, spatulas, tongs, slicers, etc.
    • Must own a set of knives.
    • Ability to lift, push, or pull weights up to 100 pounds.
    • Ability to stand for long periods.
    • Ability to work in confined spaces with high noise levels and interruptions.
    • Ability to perform duties within extreme temperature ranges.
    • Education and experience equivalent to high school graduation or related training/experience.
    • High school diploma preferred.
    • Culinary or Apprenticeship program preferred.
    • Cooking experience of 1-2 years in a similar role required.
    • Ability to obtain necessary local, state, or federal licenses or certifications.
    • Must join H.E.R.E. Local 122 union.
