Position Summary
The Production Line Lead executes standard operating procedures of the meat tempering process and combo packaging for good shipment, all while ensuring safe operations of equipment and following prescribed safety standards for lifting and movement. Plays a key role in producing a high quality food safe product per customer requirements.
Essential Duties & Responsibilities- Production Line Oversight
- Oversee the function of Production Line Associates executing the tempering process.
- Train all staff members in this function.
- Ensure all employee certifications are kept current.
- Conduct safety audits and report on standard safety protocols compliance and / or retraining needs.
- Maintain training documentation.
- Maintain equipment and necessary maintenance records.
- Work with Plant Manager and provide input for performance feedback, disciplinary actions.
- Create and manage employee schedules.
- Meat Tempering
- Manage the process of transferring frozen meat into tempering equipment.
- Monitor temperature using thermometers or automated systems to ensure specifications in SOPs.
- Ensure meat remains in the tempering area for the appropriate time to prevent over‑ or under‑thawing.
- Handling & Preparation
- Cut, sort, and portion meat once it reaches target temperature.
- Weight and measure portions according to production standards.
- Quality Control
- Inspect meat for proper thawing, texture, and signs of spoilage.
- Reject defective products that do not meet quality standards.
- Equipment Operation & Maintenance
- Operate and maintain specialized tempering machines or refrigerated chambers.
- Clean and sanitize equipment and work areas to comply with HACCP and prevent contamination.
- Perform preventive maintenance and report issues to maintenance team.
- Packaging Preparation
- Prepare tempered meat for further packaging.
- Move tempered products into packaging per SOPs, ensuring correct weight, labeling, and sealing.
- Safety & Compliance
- Follow safety protocols, proper lifting techniques, and use appropriate PPE.
- Maintain temperature logs for food safety compliance and traceability.
- Adopt sanitation and hygiene practices to avoid cross‑contamination.
- Teamwork & Communication
- Collaborate with production associates to ensure smooth flow of tempering and other stages.
- Report issues such as temperature inconsistencies, equipment malfunctions, or quality problems to supervisors.
- Product Traceability
- Record batch information for each tempered meat batch for quality assurance and regulatory compliance.
- Attention to Detail – Identify inconsistencies and deviations in product quality.
- Communication Skills – Report issues and collaborate with production teams.
- Problem‑Solving Skills – Identify root causes of quality issues and recommend corrective actions.
- Knowledge of Food Safety Regulations – FDA, USDA, FSMA understanding.
- Capability to safely operate a forklift.
- Familiarity with inventory management systems (barcode scanners, RFID).
- Basic safety protocol understanding for handling heavy or temperature‑sensitive items.
- Organizational and communication skills for smooth product movement and reporting.
- Teamwork – coordination with forklift operators, material handlers, and other staff.
- Communicate verbally and in writing.
- Be independently mobile.
- Use a computer and keyboard.
- Stand, walk, reach, stretch, stoop, bend for extended periods.
- Lift/carry 25–60 lbs.
- Work in noise levels requiring hearing protection.
- High School Diploma or GED.
- 2+ years working in a food manufacturing plant.
- Experience performing inspections, conducting tests, and understanding food safety regulations (HACCP, GMP) – highly valued.
- HACCP certification – preferred.
- Forklift certification required.
- Experience with frozen products and/or temperature‑controlled environments – a plus.
