• Determine the best way to prepare fresh food items.
• Order and merchandise the culinary department.
• Responsible for department gross profits and labor percentages.
• Write and plan weekly work schedules.
• Find ways to cook multiple fresh items for the same dishes at once, create sauces or toppings for dishes, and develop the dishes themselves.
• Maintain a clean and sanitized workstation.
• Verbally receive and call back guest orders in an upbeat and friendly manner.
• Follow health and safety guidelines.
• Adhere to recipes and presentations for food and beverage items.
• Demonstrate food safety knowledge.
• Use general knife handling skills.
• Use general meat handling and preparation techniques.
• Set up and prepare equipment for use in food production, following proper cooking procedures in accordance with the standardized recipe cards and the supervisor’s instructions to produce a uniform product.
• Utilize all types of kitchen equipment to prepare food, using the appropriate equipment such as broilers, ovens, deep‑fat fryers, slicers, choppers, steamers, and miscellaneous small equipment such as knives and paddles.
• Use the appropriate equipment for the proper preparation and service of food.

• Inside work with extreme variations in heat, cold, dust, humidity from compressors, cooler, freezer, equipment, and preparation area.

• Outgoing, upbeat guest interaction skills.
