Position Overview: The Meat Cutter plays a vital role in ensuring quality and efficiency in meat preparation, directly impacting the guest dining experience and restaurant profitability.

Responsibilities:

Food Production:

Cuts meat according to product specifications and time standards.

Follows the buffet production system to ensure quality and shelf life compliance.

Rotates cut and boxed meat to maintain freshness.

Stocks and arranges the Meat Cooler adhering to food safety guidelines.

Cleanliness:

Sanitizes all surfaces between production of different meats to prevent cross-contamination.

Recognizes signs of spoiled meat, such as sticky, slick, or foul-smelling products.

Cleans and sanitizes the meat room according to standards and local health laws.

Operational Excellence:

Maintains inventory and production levels using administrative forms.

Reports discrepancies in product or equipment to the manager.

Completes opening and closing procedures.

Performs routine maintenance on equipment as per the manual.

Fulfills duty roster tasks.
