As the Head Baker, you will be responsible for leading our bakery team, overseeing daily production, and ensuring the highest quality of baked goods — from breads and viennoiserie to specialty desserts. Your expertise in baking techniques, ingredient selection, and innovation will shape the core of our bakery offerings. You’ll play a hands-on role in recipe development, quality control, and mentoring your team.
What you’ll bring
1. Bakery Operations & Production
● Manage all aspects of bakery production including dough preparation, baking, and finishing.
● Ensure consistency in taste, texture, and appearance across all baked products.
● Maintain daily production schedules and ensure timely fulfillment of orders.
2.Recipe Development & Innovation
● Refine recipes for breads, pastries, cakes, and seasonal items.
● Collaborate with the Chef De Cuisine to align baked offerings with menu and brand vision.
● Stay informed about trends in artisan and healthy baking to bring fresh ideas to the table.
3.Team Leadership & Training
● Lead, train, and manage a team of bakers and bakery assistants.
● Establish a positive and efficient working environment that encourages learning and
accountability.
● Conduct regular performance reviews and provide ongoing coaching.
4. Quality Control
● Monitor ingredient quality, portioning, baking times, and presentation standards.
● Ensure all items leaving the bakery meet Foodstories’ expectations for taste and consistency.
● Perform regular taste and texture checks during production.
5. Hygiene & Safety Compliance
● Maintain cleanliness and sanitation of the bakery area.
● Enforce strict adherence to food safety standards and health regulations.
● Monitor equipment maintenance and report repair needs.
6. Inventory & Cost Management
● Oversee inventory levels of ingredients, packaging, and supplies.
● Work with procurement teams to manage stock and minimize wastage.
● Control costs while maintaining quality and efficiency.
Qualifications
● 5 to 7 years of hands-on baking experience, with at least 2 years in a leadership role.
● Expertise in a wide range of baked goods, including artisan breads, laminated doughs, and
● Strong understanding of baking science, fermentation, and dough behavior.
● Experience managing a bakery production schedule in a commercial or high-volume setting.
● Passion for baking, creativity, and a strong attention to detail.
● Formal culinary or baking education is preferred.
