• Support the day-to-day management of the assigned Food & Beverage operation, ensuring efficient and smooth service while consistently maintaining Mandarin Oriental standards.
• Ensure team members have excellent knowledge of food and beverage offerings and can confidently communicate this knowledge to guests.
• Ensure colleagues report for and complete their shifts according to scheduled working hours.
• Assist in managing staffing levels, colleague performance, and operational requirements in line with business needs and budgeted targets.
• Ensure tables, service stations, and operational areas are correctly arranged, prepared, and maintained.
• Ensure all colleagues are familiar with correct billing and payment procedures.
• Ensure equipment is maintained in good working condition and colleagues are appropriately trained in its correct use.
• Conduct daily briefings and participate in relevant operational and departmental meetings.
• Attend and actively participate in training sessions organized by Mandarin Oriental.
• Ensure current training materials, operational updates, and service standards are communicated to relevant colleagues.
• Ensure VIP guests and special requests are handled according to Mandarin Oriental standards.
• Monitor the quality and presentation of food and beverages and ensure standards are clearly communicated to the team.
• Conduct and attend relevant meetings in the absence of the Restaurant Manager when required.
• Support the efficient and profitable operation of the assigned Food & Beverage area while maintaining the highest standards of food, beverage, service, health and safety, and guest satisfaction.
• Communicate operational performance, challenges, and opportunities to the Restaurant Manager and relevant senior management.
• Assist in developing and executing plans to support sales, profitability, colleague engagement, and team development.
• Ensure colleagues actively contribute to reducing operational losses, controlling costs, and maximizing profitability wherever possible.
• Supervise Food & Beverage service by directing, supporting, and guiding colleagues throughout the operation.
• Ensure adequate staffing levels during each shift and promptly communicate any shortages or operational concerns to the appropriate manager.
• Identify training and development needs within the team and provide coaching and on-the-job support.
• Monitor colleague performance objectively and provide appropriate feedback, coaching, and development support.
• Lead by example and promote Mandarin Oriental s philosophy, culture, Guiding Principles, and Legendary Quality Experiences.
• Ensure guest preferences are recognized, recorded where appropriate, and consistently delivered by the team.
• Ensure relevant supervisors and colleagues are appropriately trained in reservation procedures.
• Ensure greeting, seating, order-taking, and overall service delivery are performed according to Mandarin Oriental standards.
