JOB PURPOSE:
As Grab N Go/Diner Food Prep you will assist in the preparation of items in the kitchen that are needed daily to make Diner’s menu and Grab n Go dishes. You will perform routine kitchen tasks under the guidance of the Senior BOH Manager through the prep list provided to you each day. Tasks to include, but are not limited to, weighing items, chopping, cutting, portioning, creating soups and sauces, etc.
You will also work closely with the Senior BOH Manager and the F&B manager to assist in developing standard operating procedures, recipes, and new products.
- Follow the Sr. BOH Manager’s prep list to plan daily duties in order of needs
- Label ingredients and food items and stock pantry and refrigerator shelves in an organized manner
- Properly store food items in designated containers
- Sanitize work areas and equipment, wash dishes, take out trash
- Measure seasonings, condiments, and ingredients for use in cooking
- Portion and wrap food
- Prepare ingredients for cooking
- Wash, peel, and chop fruits and vegetables
- Clean and cut or grind meat, fish, poultry, and shellfish
- Place food in warming trays or refrigerated storage as appropriate
- Use manual and electric equipment for food preparation
- Perform basic cooking tasks such as stirring, straining, and parboiling food and reducing sauces
- Maintain records of quantities of foods and ingredients used
- Update Supervisors when the stock of food items or supplies are low
- Inform Managers about broken or malfunctioning equipment
- Comply with food safety and sanitation guidelines
- Maintain the Grab n Go Bowl program while working closely with Sr. BOH Manager to create new bowls.
- Oversee the packaging and labeling of all Grab n Go items, pulling outdated and damaged products accordingly.
- Oversee the retail meat section in the store breaking down hamburgers, chicken, and steak and packaging for retail sale in the store.
- Perform additional tasks as requested by your Supervisor or Manager
Education and Experience:
- High school diploma, GED, or an equivalent certification with,
- Previous experience as a cook or in food service
- Must have a basic understanding of professional cooking and knife-handling skills
- Must be a self-motivated team player that can maintain a professional image at all times for the restaurant
- Must be able to work efficiently under pressure, such as during peak times
- Strong oral and written communication, problem-solving, and organizational skills
- Excellent interpersonal and customer service skills
- Must be able to lift at least 30 lbs. unassisted
- Must be detailed and task-oriented
- Must be willing to work holidays, weekends, days or nights
