JOB SUMMARYOak Grove Racing, Gaming & Hotel (the “Property”) is a new facility in a high traffic area in the heart of Oak Grove, Kentucky, and across the street from a large Army post, Ft. Campbell. The Property is 10 miles from Clarksville, TN and less than 60 miles northwest of downtown Nashville, TN.
FUNCTION
The Kitchen Steward is responsible for the overall cleanliness of kitchen areas and dishware, tableware, and service ware under the guidance of the Kitchen Supervisors.
ESSENTIAL DUTIES AND RESPONSIBILITIES- Carefully rinses all dishware, tableware, and service ware for restaurants before sending them through the dish machine.
- Knows and practices Health & Safety standards as set forth by governmental agencies.
- Washes hands at each possible point of contamination.
- Cleans, deck brushes, and mops all kitchen floors.
- Follows 3-compartment sink procedures.
- Weekly de‑liming of each dish machine.
- Uses all chemicals according to use, and knows where sheets are located.
- Reports any malfunctions of the dishwashing machine, including temperatures (too low or too high) or any other type of equipment used.
- Sets up, breaks down, and maintains all dishwashers.
- Empties all trashes and cardboard boxes to the dumpsters.
- Cleans and maintains all cook lines.
SKILLS AND ABILITIES
- Must have the ability to multi-task.
- Gives good internal customer service to team members.
- Available to work when needed, including weekends, holidays, and nights.
- High school diploma or equivalent preferred.
- Customer Service or Food & Beverage experience is preferred.
- Able to obtain and maintain a valid Kentucky gaming/racing license
