The overall objective and purpose of the Food and Beverage Manager is to oversee the floor coverage in the outlets and assist the serving staff in the restaurant, lounge, and in‑room dining/pool service. The incumbent is responsible for supervising Food and Beverage outlets, ensuring our guests receive the ultimate dining experience. They are to provide inspiring and strategic leadership while directing the Food and Beverage department's activities in support of the mission, core values, and goals established by the company.
CoreResponsibilities
- Supervises daily shift operations.
- Ensures Grand Performers comply with appearance standards.
- Schedules dining reservations and arranges parties or special services for diners.
- Inspects kitchen and dining areas and kitchen utensils and equipment to ensure sanitary standards are met.
- Requisition s and inspects food, supplies, and equipment to maintain stock levels and ensure quality standards are met.
- Ensures compliance with all food & beverage policies, standards, and procedures.
- Maintains service and sanitation standards in restaurant, bar/lounge, and room service areas.
- Acts as the guest service role model for the restaurant, sets a good example of excellent customer service and creates a positive atmosphere for guest relations.
- Assists servers on the floor during meal periods.
- Clears and resets counters or tables after each course when needed.
- Assists dining room servers in the food and beverage service, sets tables, serves guests as directed by the server, keeps menus clean, and maintains the clean table between servings and menu knowledge.
- Assists with providing tables with beverages.
- Removes solid linens and replaces them with clean linen.
- Transports dirty dishes to the dishwashing station.
- Polishes silver and glass as needed.
- presents menu, answers questions, and makes suggestions regarding food and beverage.
- Seats guests in the dining room.
- Explains, pairs and recommends wine from the wine list.
- Serves food and beverage in a genuine, friendly, professional, and efficient manner consistent with the Kessler image and standards.
- Relays orders to the kitchen through POS and helps serve courses from kitchen and service bars.
- Totals bill and accepts payment when needed.
- Proficiently utilizes the property management systems and follows cash handling procedures.
- Sets up bar & dining room in a thorough and swift manner.
- Sets up dining room when needed in a thorough and swift manner.
- Empowers Grand Performers to provide excellent customer service.
- Ensures staff understands local, state, and Federal liquor laws.
- Monitors alcohol beverage service in compliance with local laws.
- Ensures point of sale operations and cash handling practices are following standard operating procedures.
- Edits work schedules and evaluates the work performance of employees.
- Assigns and coordinates work of employees to promote the efficiency of operations.
