High‑Performance Executive Chef – Baltimore Ravens – Owings Mills, MD
Job Summary
The high‑performance chef will improve player health and performance through the creation of nutritionally optimal meals and snacks for the players and coaches. The chef will oversee culinary staff and collaborate with the Baltimore Ravens Performance Dietitian/Coach to provide fresh, balanced, nutrient‑dense meals.

Responsibilities
- Develop recipes, source, build and implement menus for all player and coach meals, focusing on nutrient‑dense foods.
- Lead culinary staff: hire, schedule, review performance, provide mentoring, and, if necessary, terminate staff in conjunction with HR.
- Train staff via workshops to maintain high service and quality standards of a championship NFL team.
- Assist in establishing a culinary budget, menu costing, inventory tracking, and invoice processing.
- Implement procedures for storing, rotating, labeling food, applying FIFO and safety standards.
- Build relationships with vendors to procure seasonal, local, and sustainable ingredients.
- Coordinate and prepare lunches for business/admin staff during offseason.
- Maintain immaculate standards of the work area.
Center Approach / Collaboration
- Understand NFL nutrition needs, collaborate with Performance Nutrition department.
- Adjust menus for individualized metabolic, allergy, body composition, periodization, and specialized diet requirements.
- Provide education to players, coaches, and staff on culinary methods and ingredient sourcing.
- Adapt to player and coach requests with a service‑oriented approach.
Menu Development and Execution
- Create and maintain a standardized recipe database based on performance nutrition principles.
- Integrate high nutritional value without compromising taste, quality, or presentation.
- Incorporate diverse dishes and flavors, source fresh, minimally processed ingredients.
- Use production records to minimize waste and improve menu costing.
Performance Fueling Integration
- Ensure all meals, snacks, hydration options, and recovery offerings meet the performance nutrition standards set by the Ravens Performance Dietitians.
- Maintain accuracy and consistency of perishable fueling station items, training‑day builds, and special requests.
- Collaborate continuously with Dietitians to verify menu support for health, recovery, and body composition goals.
- Train culinary staff to meet fueling standards and act on corrective actions immediately.
Skills & Abilities
- Comprehensive understanding of menu items, dietary restrictions, hazards, HACCP guidelines.
- Expertise in knife skills and cooking methods (grilling, sautéing, broiling, smoking, BBQ, sous‑vide, baking).
- Financial/budget management skills.
- Proficiency in Microsoft Office and nutritional database platforms.
- Desire for continuous improvement of self and staff.
- Ability to handle confidential information and HIPAA compliance.
Experience & Education
- Minimum 5 years as an Executive Chef or Sous Chef in the food & beverage industry.
- Minimum 3 years in culinary management within an athletic nutrition setting.
- Bachelor’s degree in culinary arts, nutrition, food science, or related field.
- Experience in culinary performance nutrition, dietary restrictions, allergen control.
- Food safety certification such as Serv Safe.
- Executive Chef Certifications (ACF, NCF, CIA) preferred.
