Responsible for overall cleanliness of kitchen operation, including Bistro, Conference Center, Bake Shop and Main Kitchen. Carry out all cleaning projects assigned by chef.

Maintain clean, orderly dishwashing area, including changing of water on machine every 4 hours.

• Participate in all cleaning projects.
• Maintain chemical storage and proper usage of chemicals.
• Sanitize and polish silver on regular schedule determined by chef.
• Properly organize all dishes and glassware in proper racks.
• Maintain all dish machines on a regular schedule.
• Empty trash regularly.
• Sweep and mop areas as necessary, directed by chef.
• Maintain grease traps and log in journal.
• Polish silver as assigned.
• Must be able to stand and walk for extended periods of time.
• Ability to lift, push, pull 50 pounds.

• Perform work related duties as assigned.
• Create positive team environment.
• Help out in kitchen with basic prep chores.
• Become aware of safety issues and chemical use.
