Macdonald Cardrona Hotel, Golf & Spa is a busy 4
* Hotel set just outside of Peebles, in the Scottish Borders. We have 99 bedrooms as well as our busy leisure club and spa, and championship golf course. We also have a restaurant serving breakfast, afternoon tea and dinner, as well as 3 bars and function space up to 250 people.

Our clientele vary from corporate guests to leisure stays, therefore no 2 days are the same and our kitchen team work consistently to deliver a great dining experience each and every time!

As Chef de Partie, you will be working under our newly appointed Head Chef as we embark on an exciting journey with an evolving food concept.

Often operating on the front line, our Chefs de Partie are the real ambassadors of our company and are committed to consistently delivering high standards.

Responsibilities
  • Previous CDP experience in 4
    * or similar hotels
  • Responsible for leadership on a particular section showing diligent food hygiene and stock control
  • Shows a good understanding of cooking techniques
  • Responsible for competently managing the day-to-day activities in a section
  • Supporting senior chefs with health and safety, food production and food safety
  • To clean and prepare food by set procedures as directed by senior kitchen staff
  • To adhere to cleaning and maintenance schedules and the recording of it
  • Control of company stock and property, ensuring correct storage of food
  • Show a complete understanding of food care and the importance of waste management
  • Previous experience in a similar role or environment is preferred
  • Good communication skills with colleagues at all levels
