DUTIES AND RESPONSIBILITES:
- Review menus on a daily basis
- Prepare all items on the menu in accordance with standard recipe cards and amounts listed on production sheet. Must have food on serving line 15 minutes prior to serving time.
- Bake all cakes, biscuits, cobblers, etc. in accordance with the production sheet. Record amount of food prepared, and amount left over on daily production sheet. Complete all other daily production needs (waste log, in/out leftover refrigeration log, recipe audits, and taste temperature log)
- Prepare food for employees' cafeteria when assigned.
- Help serve food at mealtimes when necessary.
- Prepare food for special functions when necessary.
- Must maintain a clean and safe work area at all times, with the understanding that all equipment is to be cleaned after each use. Must follow all sanitation/food handling requirements.
- Perform other duties as assigned.
- High School/GED
- Must be able to lift 50 pounds and be Serv Safe Certified.
- Ability to follow recipes and production sheets.
- Customer service orientation, organized and detail oriented, good communication skills and able to adhere to food handling/safety guidelines.
- Ability to operate kitchen & cleaning equipment.
- Must have Lead experience in institutional cooking / food preparation (3-5 years).
- Must be able to manage meal period and production.
