Sartori is a fourth-generation family-owned company producing award-winning artisan cheese since 1939. Based in Plymouth, Wisconsin, Sartori emphasizes a high-quality, handcrafted approach to cheese making. The Process Engineer Co-Op will learn the various production lines and processes at Sartori and may be involved in proposing optimized groupings of products for packaging and palletizing. This position starts in May/June 2026 and runs through December 2026 and may be eligible for housing assistance.
Responsibilities- Field measure size, position, and location of machines, lines, and process room layouts.
- Create floor plans for each process line and a master floor plan for each facility assigned.
- Create, categorize, and file drawings in a library with directory structure and table of contents.
- Search databases, catalogs, and manuals; download relevant footprint drawings and create detailed blocks for machines, tables, and conveyors accurate to overall footprint.
- Create a database of blocks for all machines and process equipment for future drawings.
- Correct inaccuracies in existing files and folders.
- Provide accurate and timely updates to the Maintenance Manager and seek guidance as needed.
- Perform process time studies to determine current performance and identify areas for improvement.
- Measure waste to determine current scrap rates.
- Other duties as assigned.
- High school diploma or equivalent (GED); currently enrolled in post-secondary education.
- Experience in CAD software required.
- Data entry and basic mechanical aptitude.
- Knowledge of basic mechanics; GMPs; basic tools and operation.
- Excellent verbal and written communication skills.
- Basic math skills and ability to read and interpret safety rules, operating and maintenance instructions, and procedural diagrams.
- Ability to work independently with minimal supervision.
Regularly required to stand, walk, reach with hands and arms, stoop, kneel, crouch, or crawl; able to lift 25 to 75 pounds regularly and up to 100 pounds occasionally; vision requirements include close, color, depth perception, and ability to adjust focus.
Work EnvironmentExposure to moving mechanical parts; may be exposed to wet/humid conditions, high places, fumes or airborne particles, chemicals, outdoor weather, coolers at 40-45 degrees, risk of electrical shock, and vibration. Noise level is moderate to loud. Reasonable accommodations may be made for disabilities.
