The Role:

We are recruiting on behalf of a Sushi/Japanese style restaurant hotel in Portsmouth and are looking for an experienced and talented Head Chef to run their kitchen. This is a new venture, offering an exciting opportunity to grow a business with a new food offer.

Ideal Candidate:
An experienced Head Chef with a track record in cooking a wide range of Asian style cuisine and who is familiar with the culture and ingredients.

• Lead and manage the kitchen for a Sushi/Japanese restaurant-hotel in Portsmouth.
• Develop and maintain high standards of quality, presentation and food safety.
• Menu development, costing, and supplier management to support a new food offer.
• Recruit, train, and mentor kitchen staff; oversee day-to-day operations and staff performance.

• Significant experience as Head Chef or in a senior leadership role within Japanese/Sushi and Asian cuisine.
• Strong leadership, communication, and cost-control skills.
• Comfortable working in a launch/new venture and strategic growth mindset.

• Salary up to £40,000 per annum depending on experience.
• Bonuses paid based on sales and gross profit targets.
