Twin Peaks - 4905 South Virginia Street - Responsibilities:
Directly responsible for all kitchen functions including food purchasing, preparation and maintenance of quality standards; sanitation and cleanliness.;
Train employees in methods of cooking, preparation, plate presentation, portion and cost control, and sanitation and cleanliness.;
Schedule labor to meet anticipated business activity and meet labor cost objectives.;
Oversee training of kitchen personnel in safe operation of kitchen equipment and sanitation practices.;
Maintain cleaning schedules for kitchen areas and ensure proper food holding and refrigeration temperatures.
